Weights and measurements

In Australia, we use a combination of volume and metric weight measurements.  Generally we would use cups/teaspoons/tablespoons for measuring things like milk, water, flour, sugar etc, and metric weights for irregularly shaped things like butter, eggs etc or where you need exact weights of items for precise cooking.

Here are some basic conversions, rounded off for ease:

  • 1 teaspoon = 5ml = 0.2 oz
  • 1 tablespoon = 20ml = 0.7 oz
  • 1 cup = 250ml = 8.4 oz
  • 1/2 cup = 125ml = 4.2 oz
  • 1/4 cup = 60ml = 2.1 oz
  • 1/8 cup = 30ml = 1 oz

Other (roughly rounded) amounts:

  • 2 oz = 60ml = 3 tbsp = 1/4 cup
  • 4 oz = 120ml = 1/2 cup = 6 tbsp
  • 6 oz = 175ml = 3/4 cup
  • 8 oz = 235ml = 1 cup less 1 tbsp
  • 10 oz = 300ml = 1 cup plus 2 tbsp
  • 12 oz = 350ml = 1 & 1/2 cups less 1 tbsp
  • 14 oz = 415 ml = 1 & 3/4 cups less 2 tsp
  • 16 oz = 475 ml = 1 & 7/8 cups
  • 18 oz = 530 ml = 2 & 1/8 cups
  • 20 oz = 590ml = 2 & 3/8 cups

We use ºCelsius for temperature – here are some basic conversions:

  • 100ºC = 212ºF
  • 110ºC = 230ºF
  • 120ºC = 248ºF = gas mark 1/2 = very slow
  • 130ºC = 266ºF = gas mark 1
  • 140ºC = 284ºF
  • 150ºC = 302ºF = gas mark 2 = slow
  • 160ºC = 320ºF = gas mark 3 = moderately slow
  • 170ºC = 338ºF
  • 180ºC = 356ºF = gas mark 4 = moderate
  • 190ºC = 374ºF = gas mark 5 = moderately hot
  • 200ºC = 392ºF = gas mark 6 = hot
  • 230ºC = 450ºF = gas mark 7 = very hot
  • 240ºC = 464ºF = gas mark 8
  • 260ºC = 500ºF = gas mark 10


Baking tins/ pans

Australian cooking pans are generally:

Cupcake and muffin pans:

  • Mini – 30ml = 1/8 cup = 1 & 1/2 tbsp
  • Cupcake – 80ml = 1/3 cup = 4 tbsp
  • Muffin – 125ml = 1/2 cup
  • Texas – 180ml = 3/4 cup

Standard tins/pans:

  • Round – 20cm x 5cm / 8″ x 2″
  • Square – 20cm x 20cm x 5cm / 8″ x 8″ x 2″
  • Round springform – 22cm x 7cm / 9″ x 3″
  • Loaf tin – 22cm x 11cm x 6cm / 9″ x 4″ x 3″
  • Lamington tin – 31cm x 25cm x 3cm / 13″ x 10″ x 2″
  • Swiss roll tin (jelly roll pan) – 31cm x 25cm x 2cm / 13″ x 10″ x 1″
  • Baking tray (cookie sheet) – 40cm x 28cm x 2.5cm / 16″ x 12″ x 1″
  • Slice pan – 29cm x 19cm x 3cm / 12″ x 8″ x 2″
  • Ring tin (tube pan) – 20cm x 6cm / 8″ x 3″

Tin/pan size:

  • 15cm = 6 inch
  • (17.5) 18cm = 7 inch
  • 20cm = 8 inch
  • (22.5) 23cm = 9 inch
  • 25cm = 10 inch
  • (27.5) 28cm = 11 inch
  • 30cm = 12 inch
